Beef carnitas

Ingredients

  • Big chunk of beef. Cheap and tough is fine, it’ll fall apart during the cooking process

  • Coriander, 1 tsp

  • Oregano, 1 tsp

  • All spice, 1 tsp

  • Garlic powder, 1 tsp

  • Onion Powder, 1 tsp

  • Chili powder, 1 tsp

  • Garlic, 1 tsp

  • Onion, 1 tsp

  • Beef broth

  • Can of crush tomatoes

  • Onions, diced

  • Salt to taste

Instructions

  1. Cut the big chunk of beef into four equal parts.

  2. Cover the beef with a mix of all the dry seasonings.

  3. Heat up a pot of dutch oven (something with a lid), add some oil, then toss in the beef. Sear it on all sides. Remove beef and rest.

  4. In the same vessel, add the onions and garlic and cook until translucent.

  5. Add the beef, crushed tomatoes, beef broth, and simmer on low, covered for 4 minutes or until the beef falls apart. Alternatively, transfer this to a slow cooker set to high.

  6. Shred the beef with a pair of forks.

  7. Stir and serve. This goes well over rice or tacos.
