Chicken and broccoli
Ingredients
- 1 sliced chicken breast, cuts perpendicular to the meat grain
- 1 tbsp Chinese cooking wine
- 1 tbsp Corn starch
- 1 tbsp soy sauce
- Broccoli, cut to bite-sized pieces
- 2 tbsp brown sauce
- 2 tsp corn starch slurry (mixed 1 tsp corn starch, 1 tsp water)
Instructions
- Prepare the chicken by mixing it with cooking win, corn starch, and soy sauce. Set it aside.
- Blanch the broccoli, drain, and set it aside.
- In a wok or pan, add some high smoke point cooking oil to coat.
- Heat up the oil.
- Once the oil starts to shimmer, add in the chicken. Cook until the surfaces are browned, but the center is still not quite done yet.
- Add the broccoli back in and stir.
- Add the brown sauce and corn starch slurry and stir.
- Once the sauce is thickened a bit and sticks to the chicken and broccoli, serve.
Tips
The chicken can be substituted with tofu or mushrooms for a vegetarian option, in which case the seasoning and protein pre-cooking steps are not necessary. Everything can simply be blanched and then cooked with the sauce.
