Chicken and broccoli

  1. 1 sliced chicken breast, cuts perpendicular to the meat grain
  2. 1 tbsp Chinese cooking wine
  3. 1 tbsp Corn starch
  4. 1 tbsp soy sauce
  5. Broccoli, cut to bite-sized pieces
  6. 2 tbsp brown sauce
  7. 2 tsp corn starch slurry (mixed 1 tsp corn starch, 1 tsp water)

  1. Prepare the chicken by mixing it with cooking win, corn starch, and soy sauce. Set it aside.
  2. Blanch the broccoli, drain, and set it aside.
  3. In a wok or pan, add some high smoke point cooking oil to coat.
  4. Heat up the oil.
  5. Once the oil starts to shimmer, add in the chicken. Cook until the surfaces are browned, but the center is still not quite done yet.
  6. Add the broccoli back in and stir.
  7. Add the brown sauce and corn starch slurry and stir.
  8. Once the sauce is thickened a bit and sticks to the chicken and broccoli, serve.

The chicken can be substituted with tofu or mushrooms for a vegetarian option, in which case the seasoning and protein pre-cooking steps are not necessary. Everything can simply be blanched and then cooked with the sauce.
