Ingredients
Pizza dough. You can make it or buy it.
For cheese - blend of mozzarella and queso blanco. This is a close substitute to the authentic cheese.
- For zaatar - mix a 1:1 ratio of zaatar and olive oil.

Instructions
Shape the pizza dough into fist-sized balls.
Roll out the dough into circles.
Preheat the oven with the baking steel in it to 500 degrees Fahrenheit.
Transfer the dough circles onto a floured baking peel, then top with either the cheese mix or the zaatar mix (or both). Slip the topped dough into the oven.
Bake for about 4 minutes. You want the dough to cook through, but not form a crispy crust.
Remove manoush, fold in half, and rest on a cooling rack. Serve.
