Ingredients

  • Pizza dough. You can make it or buy it.

  • For cheese - blend of mozzarella and queso blanco. This is a close substitute to the authentic cheese.

  1. For zaatar - mix a 1:1 ratio of zaatar and olive oil.

Equipment

  • Baking steel

  • Pizza peel

  • Rolling pin

Instructions

  1. Shape the pizza dough into fist-sized balls.

  2. Roll out the dough into circles.

  3. Preheat the oven with the baking steel in it to 500 degrees Fahrenheit.

  4. Transfer the dough circles onto a floured baking peel, then top with either the cheese mix or the zaatar mix (or both). Slip the topped dough into the oven.

  5. Bake for about 4 minutes. You want the dough to cook through, but not form a crispy crust.

  6. Remove manoush, fold in half, and rest on a cooling rack. Serve.
