Pita Pockets
It’s fun to watch these cook. They poof up very actively when done right.
Ingredients
360 grams all-purpose flour
2 tsp yeast
2 tsp sugar
1.5 tsp salt
1 cup (227 grams) water
2 tbsp (25 grams) vegetable oil
Instructions
Mix and knead all the ingredients.
Rest covered for 1 hour.
Divide into 8 even balls and roll flat into 6" circles.
Rest 15 minutes, covered.
While resting, pre-heat oven to 500 degrees Fahrenheit with a baking steel in the oven.
Dust a pizza peel with flour, and use it to transfer the dough onto the hot baking steal.
Bake for about 5 minutes. During the this, the pita pockets should puff up.
Remove and rest.
Tips
- Be careful not to puncture the surface of the dough, that leads to deflation.
