Pita Pockets

It’s fun to watch these cook. They poof up very actively when done right.

Ingredients

  • 360 grams all-purpose flour

  • 2 tsp yeast

  • 2 tsp sugar

  • 1.5 tsp salt

  • 1 cup (227 grams) water

  • 2 tbsp (25 grams) vegetable oil

Instructions

  1. Mix and knead all the ingredients.

  2. Rest covered for 1 hour.

  3. Divide into 8 even balls and roll flat into 6" circles.

  4. Rest 15 minutes, covered.

  5. While resting, pre-heat oven to 500 degrees Fahrenheit with a baking steel in the oven.

  6. Dust a pizza peel with flour, and use it to transfer the dough onto the hot baking steal.

  7. Bake for about 5 minutes. During the this, the pita pockets should puff up.

  8. Remove and rest.

Tips

  • Be careful not to puncture the surface of the dough, that leads to deflation.
