Ingredients
Potatoes
Salt
Pepper
Vegetable oil
Paprika (optional)
Onion powder (optional)
Equipment
Stock pot or saucepan
Cast iron pan
Instructions
Optionally, peel the potates. Or just give them a solid rinse.
Dice them.
Boil them, about 10 minutes or until they pierce easily with a fork. This boiling is key.
Strain them.
Heat up a cast iron pan, coat generously with oil, then add in the boiled potatoes.
Cook and stir until all sides are slightly crisped.
Season.
Cool and serve.
