Generic Brown Sauce

The name is plain, but it’s anything but that.

This is a staple sauce used in all sorts of Chinese dishes.


  1. 3 tbsp soy sauce
  2. 1 tbsp dark soy sauce
  3. 1 tbsp light soy sauce
  4. 1 tsp sugar (optional)
  5. Salt and pepper to taste
  6. Add a splash of water


  1. Mix it all and set it aside at the mise en place station until it’s called upon, such as for a chicken and broccoli dish.
