Smashed Cucumbers
Ingredients
While I provide measurements here, I often just eyeball the proportions and adjust to taste.
- 4 small cucumbers. Smaller cucumbers work better – they crunch better, and they have fewer seeds and less moisture.
- 2/3 tsp salt
- minced or ground garlic
- 1 tbsp black vinegar
- 1 tbsp chili oil (optional)
- 1/2 tsp regular soy sauce
- 1 tsp sesame oil
Instructions
- Gently smash cucumber.
- Slice cucumber diagonally into wedges.
- In a bowl, mix the cumber with salt, garlic, vinegar, chili oil, soy sauce, sesame oil. Serve.
Tips
Q: Why do we smash the cucumbers?
A: It softens the texture and creates more grooves for the seasonings to sneak into.
