Smashed Cucumbers

While I provide measurements here, I often just eyeball the proportions and adjust to taste.

  • 4 small cucumbers. Smaller cucumbers work better – they crunch better, and they have fewer seeds and less moisture.
  • 2/3 tsp salt
  • minced or ground garlic
  • 1 tbsp black vinegar
  • 1 tbsp chili oil (optional)
  • 1/2 tsp regular soy sauce
  • 1 tsp sesame oil

  1. Gently smash cucumber.
  2. Slice cucumber diagonally into wedges.
  3. In a bowl, mix the cumber with salt, garlic, vinegar, chili oil, soy sauce, sesame oil. Serve.

Q: Why do we smash the cucumbers?

A: It softens the texture and creates more grooves for the seasonings to sneak into.
